Superfood Oatmeal

There is nothing I love more than a big phat bowl of oatmeal on Sunday morning.  I often refer to oatmeal as the nachos of breakfast foods, you can add anything in it and you can't mess it up!  Oatmeal is also a great way to incorporate superfoods, which we all know I love, it's high in fiber so it will fuel you for a good portion of the morning and afternoon.  I don't do basic well when it comes to anything and I certainly won't settle for basic oatmeal.  Dats right, I said basic oatmeal, you won't find that here.  Let's get started....

Superfood oatmeal:

1/2 cup of oats -> I love Bob's Red Mill Organic Rolled oats

1 cup of nut milk

1 tablespoon of coconut oil

1 banana

1 tablespoon on honey or maple syrup

2 tablespoons of almond butter

1 1/2 teaspoon of cinnamon 

1 tablespoon of maca powder 

1 tablespoon of chia seeds

1 tablespoons of pecans or nut of your choice

Toppings -  optional:

2 tablespoons of organic, unsulphured coconut flakes

2 tablespoons of cinnamon & sugar roasted pumpkin

1 dollop of  almond butter



Combine the oats, almond milk and chia seeds in a sauce pan on medium heat.  Once those ingredients are mixed all in the coconut oil and mix.  Then add in 3/4 of the banana, mash and combine.  Add in the maca, cinnamon and maple syrup and blend all together.  Lastly add in the pecans and once the oatmeal is at your desired consistency transfer to a bowl and top with the ingredients  listed above or the topping of your choice.  Then enjoy!  Everyday it's important to take some time and check in with yourself.  A moment to ask yourself how are you doing and feeling?  Sundays seem to be an especially good day for that.  It's a great way to add some perspective and awareness into your life and having a beautiful bowl of superfood oatmeal while you take some time to check in doesn't hurt either.  Wishing you a great week!
